We missed yesterday’s cuppa on the patio as Tia Maria Von Doglet had another post-surgery follow up appointment with her ophthalmologist. She’s all good, so now we’re back on track to continue her pre-ulcer treatment for Pigmentary Keratitis and corneal degeneration. Yay! The other two things suck because they make her eyes cloudy, but she is pain-free.
Anyway, we made plans last night to go out for breakfast this morning, but you know how it is when the reality of the alarm clock hits.
*grumblemutter*
Instead, we opted for a home-cooked vegan* breakfast of pancakes, maple syrup (also known as murple surple) and fresh fruit on the patio.
Charlie has worked really hard on our garden over the last couple of years, but it’s a fairly uncontrollable force of nature, which is something I love. Even the veggie patch went nuts. While it failed to produce much in the way of anything edible, largely due to the thieving wildlife, it looked impressive.
And it did yield these.
I roasted those suckers, tore off their skin with my bare hands and mashed them to a pulp (OMG, you did what? Plants have feelings too, you know!**)


Original recipe from here. It’s good, but I think next time I’ll make more of a hommus with them because as much as I love beetroot dip, the texture isn’t something I’m fussed about.
Also, how awful is the lighting in my kitchen? If only I had a camera with awesome low-light capabilities.
*ahem*
*Breakfast was vegan until husband paired his pancakes, American style with bacon. To which I cried, “ruiner!” (and refused to cook)
